One-Pan Sausage & Veggies

Ingredients

  • 1 lb Rocky Ridge Farm Italian sausage or kielbasa 
  • 4 medium potatoes, diced into 1-inch pieces
  • 1 onion, sliced
  • 2 bell peppers, sliced
  • 1–2 cups broccoli florets or green beans (optional)
  • 2–3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Optional additions:

  • grated parmesan
  • fresh parsley

Instructions

  1. Preheat oven to 425°F.

  2. Prepare the vegetables.
    Spread potatoes, onions, peppers, and any other vegetables evenly across a large sheet pan.

  3. Season.
    Drizzle vegetables with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss lightly to coat.

  4. Add the sausage.
    Slice sausage into thick rounds or leave in small links and place on the sheet pan with the vegetables.

  5. Roast.
    Bake for 25–30 minutes, stirring once halfway through, until the potatoes are tender and the sausage is browned.

  6. Serve.
    Sprinkle with parmesan or parsley if desired and serve hot.

Tip:
For crispier potatoes, roast them alone for 10 minutes first, then add the sausage and remaining vegetables.
