One-Pan Sausage & Veggies
Ingredients
- 1 lb Rocky Ridge Farm Italian sausage or kielbasa
- 4 medium potatoes, diced into 1-inch pieces
- 1 onion, sliced
- 2 bell peppers, sliced
- 1–2 cups broccoli florets or green beans (optional)
- 2–3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
Optional additions:
- grated parmesan
- fresh parsley
Instructions

Preheat oven to 425°F.

Prepare the vegetables.
Spread potatoes, onions, peppers, and any other vegetables evenly across a large sheet pan. -
Season.
Drizzle vegetables with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss lightly to coat. -
Add the sausage.
Slice sausage into thick rounds or leave in small links and place on the sheet pan with the vegetables. -
Roast.
Bake for 25–30 minutes, stirring once halfway through, until the potatoes are tender and the sausage is browned. -
Serve.
Sprinkle with parmesan or parsley if desired and serve hot.
Tip:
For crispier potatoes, roast them alone for 10 minutes first, then add the sausage and remaining vegetables.
