Chicken Adobo

For those of you who don't know, I (Hannah) was born and raised in the Philippines where my parents were missionaries with Word of Life. I couldn't have asked for a better childhood!  I grew up going barefoot, picking fresh guavas and mangoes out of trees, playing in the rain during typhoons, working around the camp with my dad and spending time with all my Filipino friends.  Filipino people are amazing!  They are a very respectful and hospitable culture.  They love to get together for celebrations and parties and have food, LOTS of food!  One of my favorite Filipino foods is Chicken Adobo and I LOVE making it here on the farm as it is a little taste of my childhood.  I stumbled upon a really good adobo recipe that I've tweaked a bit so I thought I would share the love with you!

2-3lbs chicken (breasts, thighs or legs)  2 1/2 cups water
3 bay leaves 2 teaspoons sugar
1 cup soy sauce 1/2 teaspoon salt
1/2 cup vinegar 1 teaspoon whole peppercorns
6 cloves garlic, minced Diced Potatoes (optional)


  1. Combine chicken, soy sauce and garlic in a large bowl.  Mix well.  Marinate the chicken for at least 30 minutes (the longer the better).
  2. Heat a cooking pot. Drizzle in a little olive oil. When the oil is hot, pan-fry the marinated chicken for 5-10 minutes. 
  3. Pour-in the remaining marinade, including garlic. Add the water. Bring to a boil.
  4. Add dried bay leaves, sugar, salt, whole peppercorns and potatoes if you choose. Simmer for 30 minutes or until the chicken gets tender
  5. Add vinegar. Stir and cook for 10 minutes.
  6. Serve hot over rice.  Enjoy!
